Peanut Butter Cookies (GF - no flour needed!)


Some people hate peanut butter. Others LOVE it. This recipe is for the lovers. It's the simplest cookie recipe I have ever come across. It's a 'throw everything into a small bowl and mix it' kind of recipe. I don't remember when or where it was found, but here it is in all of it's glory.


When someone asks me for a treat and I don't feel like grabbing my mixer and half of the ingredients from the pantry -- they get this. I also like to think it offers some healthy fats and protein to your lunch in a pinch (don't worry about the sugar though :) ).


There are some fun things that can be done with this one too. You can press it into a pie plate and bake it into a crust and fill it with your favorite pudding to top with whipped cream. Perhaps you'd like to put some vanilla ice cream in between two of them. The cookie will be a bit crumbly compared to what you're used to, but the vanilla and salty/ sweet flavor of the peanuts together is a perfect experience! Are you a peanut butter cup fan? Just like everything else, these fare well dipped in some chocolate too.


Anyway, make them, you will not regret it!


Ingredients:

1 cup peanut butter (creamy, crunchy -- whatever you keep in the house!)

1 cup sugar

1 eggº


Baking Instructions:

  1. Preheat oven to 350ºF

  2. Put all ingredients into a small bowl, and mix well with a fork.

  3. Using a spoon or cookie scoop, drop a tablespoon of dough onto a lined cookie sheet.

  4. Press a fork into the cookie to evenly flatten each ball into a disc shape.

  5. Bake until the edges are golden.

  6. Enjoy!
