Cornbread



I absolutely LOVE cornbread. If you think about it, its one of the most versatile foods. In my house we eat it for breakfast, lunch, dinner, dessert, and that sneaky snack you have when your cleaning up from dinner and the kids are out of range and can't see ;) . It's the perfect vehicle for flavor. You want it sweet? Add a bit of extra sugar. Want it crisp? Fry it in a pan with sizzling butter. You like spice and sass? Throw in red pepper flakes and those jalapenos you always walk past in the supermarket. Do you dare to add ice cream and a drizzle of caramel? Trust me. YES.


If you haven't figured it out already, I have worked on cornbread for a long time and my family is also grateful that I am willing to push it past normal limits. Here it is in it's purest form.


Ingredients:

1 cup all purpose flour

1 cup cornmeal

1/2 cup granulated sugar

1 Tablespoon baking powder

1 teaspoon salt

1/2 cup vegetable oil

2 eggs

1 cup milk

2 Tablespoons melted butter

1 Tablespoon honey


Baking Instructions:

1.Preheat oven to 425ºF

2. Add dry ingredients to a medium sized mixing bowl.

3. Make a well in the center of your dry ingredients and add the wet ingredients to the bowl.

4. Mix well until all ingredients are combined, making sure nothing sticks to the bottom of the bowl.

5. Pour mixture into a greased pan (8x8 square is my style!) and bake until the center springs back when you touch it.

6. Enjoy!
