Banana Bread


My kids are always looking for snacks. I'm sure like anybody else's kids, they love being at the supermarket and picking out what they get to take home. Every time we go through the produce section, they get excited to see the bananas. Every time we leave the produce section, we have bananas in our cart. We always have bananas that nobody eats. What do you do with ripe bananas? You make the best ever banana bread. Every time. What happens when you need your bananas right away, but they are still yellow?? Just bake them in the oven (but don't peel them!) until they are plain old mush :)


The nice thing about this banana bread, other than the flavor, is that it lasts nicely in a sealed container or zipped bag right on my counter. I also tend to freeze it so I can pull some out for a breakfast treat for these kiddies! The BEST use for these frozen pieces... fry a few slices in butter and then top it with vanilla ice cream. Now that the bananas on my counter sparked my interest in posting this recipe, I'll have to head down to make a fresh batch!


Ingredients:

3 eggs

1 cup granulated sugar

1/2 cup brown sugar

3 mashed bananas (super ripe!)

3/4 cup vegetable oil

1 3/4 cup all purpose flour

1 1/2 teaspoons baking soda

1/2 teaspoon salt

1 teaspoon cinnamon

1 teaspoon vanilla

1/2 cup chocolate chips (optional)

1/2 cup chopped walnuts (optional)


Baking Instructions:

  1. Preheat oven to 350ºF

  2. In a bowl, mash your 3 bananas and both sugars together with a fork.

  3. Add your eggs, oil, and vanilla to your bananas and mix.

  4. Add your flour directly into the bowl of wet ingredients. Make a little well in the middle of your flour and add the baking soda, salt, and cinnamon. Mix well to make sure all ingredients are incorporated and nothing sticks to the bottom of the bowl.

  5. If using, add chocolate chips and walnuts and fold them into the batter, just to distribute throughout.

  6. Bake until the bread springs back when you push on the center.

  7. Enjoy!
